"I'd love to have my own bar". We all know it's an idle dream for most but many of us in the drinks industry still secretly harbour the ambition. But what does it take to actually make it happen? Well Kevin Demers from Montreal is an absolute authority on the subject as he made the jump from juggling bartending and professional Ice Hockey to opening his own bar, The Cold Room 5 years ago. The lessons he learned enabled him to follow up with El Pequeño and Parlement shortly after, giving a hat-trick of Canada's best bars. Now he consults on other bar openings and shares his knowledge and insights with us. We also welcome another guest to our "Desert Island" where they can choose to bring only one drink with them. This time we hear from Carol Quinn, the Archivist for Irish Distillers, (part of Pernod Ricard).
