Having never set foot in a spa before, my first week of indulgence was at the SHA Wellness Clinic in Spain. It came recommended, but I had little prior knowledge of what was in store or what a life changing experience it would turn out to be. At the clinic you are checked in and checked out in clinical style based on nutrition. This really appealed to me. iPads are handed to you with your schedule on them—all very organized, sorted. It made you feel like you were in safe hands. The device contained appointments with everyone from a nutritionist to stress testing, from treatments like a delicious facial to being frozen in a cryotherapy tank. You name it; it was there. But it was the food and diet that were life-changing: the KUSHI diet and way of life. I received private cooking lessons from the chef. For however healthily I thought I had eaten—and been frustrated by my lack of weight loss— this changed the dynamic. We cooked and ate food that was ‘of the moment’, in season and of the land, with smaller portions but with bigger flavours using delicious Japanese herbs and seasonings I had never come across (who knew about an Umeboshi plum before?). This was the diet for me. Once over the initial hunger and angst, (thank goodness for being with my daughter and able to hibernate in a room, grumpy and watch Grey's Anatomy) I knew this was the way forward. This diet is easy to maintain as they have an insane shop on the premises and a website to buy their food. And seaweed is now my friend, not something I avoid when swimming in the sea. https://shawellnessclinic.com/en/ One of my favourite recipes was how to make delicious miso soup. Using a little toasted sesame oil, sauté some finely-chopped white onion until softened alongside some thinly sliced carrot strips. When tender, add about a pint and a half of water and a few strips of dried Wakame seaweed. Bring to simmer and let it cook down. For the final few minutes of cooking add a heaped tablespoon of brown rice miso and stir and serve. Delicious, nutritious and warming.
